Boil the Vichy Célestins mineral water and the honey together to produce a syrup. Melt the cocoa butter, then add the cold butter to the hot cocoa butter.
Add the flour to the baking powder and icing sugar, then pour onto the butter and mix until the mixture resembles fine breadcrumbs. Add the eggs and the Vichy syrup. Mix to a firm dough. Roll out between two sheets of non-stick baking paper, to around 2mm thick, then cut to the desired form with a pastry cutter, and bake in the oven for 10 minutes at 170°C.
Bilberry mousse
Beat the egg whites with a whisk until stiff, then pour on the warm Vichy Célestins mineral water syrup, mixing all the time. Add the fromage blanc.Put the cold mineral water into a saucepan, add the gelatin to soften. Then heat the water to melt the gelatin. Remove from the heat and add the bilberry pulp to the molten gelatin. Pour the bilberry pulp onto the beaten egg whites, mix lightly. Divide between the baked pastry bases, decorate with fruit or a coulis of fresh fruit.

Bilberries belong to the family of red fruit with a moderate Calorific Value. Their low sugar content and rich water content, make the bilberry a tasty, thirst-quenching and refreshing fruit. In nutritional terms the bilberry provides a variety of vitamins (C, folates, beta-carotene,…) including vitamin E (2.42mg/100g) which predominates (plays a major role as an antioxidant). Its red-violet colour is also due to being rich in other antioxidants such as flavonoids (anthocyanins). Bilberries are known to increase visual acuity and preserve sight. The have disinfectant and astringent virtues useful in the treatment of infections of the digestive system. They also help with circulation and vein problems which are accentuated during pregnancy, or during the menopause period. It is best to eat them fresh, newly picked.
